SOBREHUSA

Ingredients: 1 kg of green beans, 1 onion blood sausage, 1 green bell pepper, 1 red tomato, 1 small onion, 1 sprig of cilantro, 1 pinch of turmeric, 1 egg, some lettuce leaves.

Preparation: Sobrehúsa is a green bean stew, prepared in the traditional way of stews. The process is very simple. We make a sofrito with the bell pepper cut into pinhead-sized pieces, the onion, and the tomato. Add the green beans, the more tender, the better, and sauté them for a few minutes.

Incorporate the blood sausage in medium-sized pieces and the lettuce, cover with water, add the sprig of cilantro, turmeric, and let it simmer until the green beans are tender. Before removing from heat, if the broth is too clear, add a pinch of coloring and the beaten egg to thicken the broth.
